Tradition and modernity

Historic vaults and wooden casks

A walk through the cellar offers an impressive glimpse into the estate’s long history. Beneath the historic residence, the old vaulted cellars extend underground over several levels, tracing their origins to the former Jesuit monastery. The building itself was erected around 400 years ago and remains the family home.

Here, in these underground cellars, the house’s great tradition reveals itself in hand-carved wooden casks in which the wines mature. These works of art offer a sense of the importance of wine in the family’s history.

Modern technology and gentle winemaking

Today, the modern side of the estate adjoins the historic cellars. The fermentation cellar, completed in 2015, enables exceptionally gentle grape processing by harnessing gravity. Innovative cellar technology allows the harvested fruit to be handled with particular care.

Temperature-controlled stainless steel tanks provide ideal conditions for maturing fresh, fruit-driven white wines and for precise red winemaking. In our cellars, two worlds come together that have always belonged side by side: the experience of five generations and the most innovative cellar technology.

The “VIVA” sustainability programme

Today, our family estate is certified as an organisation under the Italian national “VIVA” sustainability standard for the indicators Air, Water and Soil, reflecting the company’s commitment to sustainable working practices. Valoritalia awarded Wilhelm Walch the certification in 2024, and it was renewed in 2026.
